Our homeland’s tradition is made up of passion and unique flavours. The products that you’ll find in our restaurant come from a careful selection of local expert artisan producers. The delicacy of Guerrino Corradi’s Prosciutto di Parma (Parma ham), the incomparable flavour of Butteri and Lanfredini’s 24-month aged Parmigiano Reggiano (Parmesan cheese), the Jemma dairy’s DOP buffalo mozzarella of Campania, and Felino IGP’s aged salami. All these products are skilfully created by expert artisan producers according to the ancient traditions of the region that they represent.

PROSCIUTTO DI PARMA (Parma ham)

Guerrino Corradi

Since 1945, in the hills of Langhirano, the Corradi family has perfected their production of Prosciutto di Parma, with a balanced combination of passion, tradition, and technology. The sea-scented air which descends from the Apennines of Tuscany and Emilia Romagna is the secret ingredient that makes this company’s products unique. Only the highest quality thighs are selected to become prosciuttos with such well-defined characteristics. As Guerrino says, “We want to be the best: sweet, savoury, fragrant.”

BUFFALO MOZZARELLA

Caseificio Jemma

At the start of the 20th century, it was one of the first farms to breed buffalo indoors and use automatic milking machines, while the herds were allowed to roam free in the area. To this day, the milk used comes exclusively from their own farm. The observance of the guidelines established by the Consortium for the Protection of Buffalo Mozzarella gives Jemma’s products the DOP (Protected Designation of Origin) seal.

GORGONZOLA

Caseificio Angelo Croce

An international reference point for Italian quality and flavour since 1880. Over the years the Angelo Croce dairy has grown and spent the decades improving and perfecting its production of this high quality type of Gorgonzola, without ever industrialising its processes. This producer’s long company history is, in and of itself, a guarantee of quality.

THE WINES OF OUR REGION

Azienda Agricola il Casello

The winery, managed by the Rigolli family, combines knowledge of traditional wine making with the safety of modern technologies. The production vineyards, cultivated according to the Guyot pruning system, extends across 18 hectares, all in the Bacedasco Basso area, at 250 metres above sea level. The company produces the primary DOC varietals of Piacenza. Its red wines include Gutturnio still and sparkling, Barbera, and Bonarda. Its white wines include Ortrugo and Malvasia, both sweet and dry variants.

SALAME FELINO

Consorzio del Salame Felino

Salame Felino (a variety of Italian salami produced in the municipality of Felino) owes its unique characteristics to a series of specific connections to the environment, in a broad sense and including both natural and human geographic factors that have to do with the raw materials, production techniques, ageing environments, and above all their integration. The Consortium guarantees its member companies the IGP (“Protected Geographical Indication”) denomination.
